Starters
Roasted heirloom tomato, piquillo pepper and basil soup, burrata beignets, kalamata tapenade and basil crisps (v)
Duo of Scottish smoked salmon and smoked halibut, yuzu pearls, caviar, preserved lemon, gribiche sauce and langoustine fritter
Air dried iberico ham, balsamic roasted figs, marinated feta cheese, candied walnuts, blushed tomatoes and winter truffle vinaigrette
Crispy ox cheek and Cashel blue fritter, horseradish and celeriac remoulade, cranberry relish and affilla cress salad
Ravioli of wild mushrooms, Delamere goat’s cheese and thyme, Jerusalem artichoke in two styles and sage butter (v)

Whole butter roasted Cheshire turkey and bread sauce
Roast sirloin of ridings reserve beef and Yorkshire pudding
Whole roasted suckling porcetta and caramelised braeburn apple
Torchon of Atlantic turbot, mousseline potatoes, fricassee of winter chanterelles, candied salsify, chantenay carrots and citrus beurre blanc
Hesketh Bank beetroot, nutmeg spinach, pine nut and morel mushroom orzo, dolce latte, parmesan and Alba truffle crumble (v)
Selection of seasonal vegetables, goose fat potatoes, chipolata sausage sage and onion stuffing and rich roast pan gravy
